Going Raw For Dinner Tonight

Raw Thai Yellow Curry Full Recipe 

Curry Sauce:
2 tomatoes
1 yellow pepper
2 sticks celery
1 carrot
1 fresh date
2 tbsp lecithin granules
2 tbsp coconut oil
1 tbsp apple cider vinegar
1 tsp turmeric powder
1 tsp yellow curry paste
1 tsp tamari
4 mushrooms
Handful baby spinach leaves
Cauliflower Rice:
1 head of cauliflower
50g coconut chips
50g sesame seeds
4 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp tamari
1 tsp coconut nectar

1. Put the cauliflower in a food processor & whizz it up into pieces that are roughly the same size as grains of rice (you should whizz the cauliflower up in 3 stages so that the pieces don’t end up too small)
2. Put the sesame seeds & coconut chips in a food processor & whizz them up into a fine powder)
3. Add the mix to the cauliflower, stir it all together, add the wet ingredients & mix that together too
4. Put the tomatoes & pepper into the food processor & whizz it up into a liquid
5. Add the rest of the curry sauce ingredients into the food processor & whizz them up too
6. Pour the sauce into a bowl, add the mushrooms & spinach & mix everything together.
7. Serve the curry over the rice, garnish with sesame seeds & coconut flakes
